Ingredients:
- Chicken stock- 5/6 cups
- Chicken breast-1/2 cup
- Shrimp-1 cup
- Mushroom-1 cup (optional)
- 1 Lemon grass stalk (sliced lower end plus the intact upper stalk)
- Green chili-1/2 (chopped)
- Egg yolk-3
- Corn flower - 3 Tbsp
- Vinegar/lemon juice- 3 Tbsp
- Tomato Sauce-3 Tbsp
- Chili sauce -2 Tbsp (optional)
- 1tbsp soya sauce
- Sugar-3 tsp
- Salt- to taste
Step by step Preparation:
- Place chicken stock in a large soup pot over lower-medium heat and boil it well.
- Now add chicken breast, mushroom, lemon grass, green chili and boil until the chicken is cooked.
- Meanwhile take a bowl and beat the egg yolks and add cornflower and mix it very well and set it aside.
- Now turn down the heat to lower-medium and add Vinegar/lemon juice, Tomato Sauce, Chili sauce, sugar, salt and soya sauce and stir.
- Now take 3-4 tbsp stock from the soup pot and mix it smoothly with the egg mix that you set aside.
- Now slowly pour the egg mixture into the soup bowl while stirring the soup continuously.
- When the soup turns smooth then add the shrimps and boil until they are cooked.
- Pour the prepared soup into serving bowls and serve hot.
